They don't.
You can repair them as often as you need to, though the current arc is about recovering a piece that would restore FAL's memories.

So in a way, you could say they do "die" in very special circumstances.

That shooting method was introduced pretty early in the series when it was still fun, but i am aroused remembering it every time I see SiG in any game.
